After yesterday’s ink-free donut, I decided to use the same palette and approach to answer today’s prompt of “fluffy.” This is the final prompt of the month as a new adventure begins tomorrow for June! Pancakes were the first thing that came to mind as Philippe and I always have them on the weekends while watching cartoons, of course, like the kids that we are. There’s something so fun about doing what you did as a kid on the weekends. The key difference from when I was a kid, though, is that Philippe now makes them dairy-free using almond milk. They’re fluffy and delicious and if you’re curious about the recipe, he was generous enough to include it at the bottom of this full post! His food is fabulous and I’m always telling him to start a blog with his recipes, but in the meantime, I just feature them inside Doodlewash on the rare occasions he provides them. We should seriously team up and create an illustrated cookbook, but in the meantime, maybe I’ll be able to coax more recipes out of him in the future.

My story yesterday mysteriously disappeared and I was able to bring back the first paragraph only via my social media feeds. No doubt a victim of the many crazy updates I’ve been making to this site, but I hope everything is back to working order now. I honestly don’t know what I said, but I’m sure it was brilliant so I’m sorry if some of you missed it. Actually, no, it was probably just the usual rambles and not worth worrying much over, but I can say anything about it now. It’s been quite a month, and apologies if you’ve experienced any glitches on the site as I try to fulfill a million dreams simultaneously. Lots of incredible things coming, so thanks for your patience while I get it all figured out. Right now, I’m just really wishing it was the weekend as I’m totally craving pancakes. I will admit that this doodlewash is extreme. We only have three pancakes each, but a big stack just looks that much cooler.

I’m super excited about all the wonderful things coming. In just one short month, it’s the 2nd annual World Watercolor Month in July and this year will be bigger and better than ever! In the next week, I’ll be launching the new Doodlewash Community section which many of you have already started to try out by creating profiles and uploading artwork, right here on this site. To Log In to Doodlewash.com, click the “Log In” link in the Main Menu. You can then enter your username and password to access the site, create an account, or log in with Facebook. I’m really just an illustrator and not a true web programmer, so I view everything I’ve made happen so far as a bit miraculous. I’m sure I’ll make plenty of mistakes as things move along, but that’s pretty much the path you always sign up for when you’re creating new things. The trick is to just keep moving forward. No matter what, things have a way of being wonderful and delicious in the end. Like a nice little stack of fluffy pancakes.


Recipe for Philippe’s Almond Milk Pancakes

INGREDIENTS:
• 1 1/4 Cup Unbleached Flour
• 1/4 Cup Whole Wheat Flour
• 1 1/2 Cup Almond Milk
• 1 Egg
• 3 tsp. Baking Power
• 1 tsp. Baking Soda
• 1 tsp. Vanilla Extract (unless it’s Vanilla Almond Milk)
• 2 tsp. Black Rum
DIRECTIONS:
Lightly mix all the ingredients together, careful to not mix too much. It should only take about 15 seconds. Let it sit for 5-10 minutes. On a hot non-stick pan, pour the dough to form pancakes. Once the bubbles stop, it should be time to flip it to the next side. Once cooked, they should appear slightly brown. Don’t be surprised if these aren’t as brown as traditional pancakes. Serve with berries, maple syrup, and, of course, a bit of lovely butter!

  1. I LOVE pancakes, especially big fluffy ones. Will you share? I have to admit, I’ve never heard of putting Black Rum (I don’t even know what that is) in pancakes, but I put a tablespoon or two of orange juice in my French toast, much beloved by my grandkids. Anyway, my fork is ready and so is my mouth – dish up, Philippe. Yum yum and thank you.

    As for the techie stuff, I can’t help you – but I can tell how hard you’ve been working to create this great new blog. Thanks, Charlie.

    1. I would definitely share my pancakes with you, Sharon! 😃💕Philippe’s are soooo delicious!! And French toast is one of my faves!! I’ll happily come over for a bite of that! Yep, the techie stuff is isn’t my forte, but I’ve been a bit surprised how much I’ve been able to accomplish. It’s like I’m a little kid again, trying new things, breaking them, and then fixing them back into something cool. Really fun!

  3. I love love love pancakes but since I’ve discovered that gluten makes me quite ill, all I can do is enjoy your fantastic doodlewash. Probably all for the better since yesterday had me longing for that perfect glazed donut and today I am awash in wonderful pancake memories. So generous of Philippe to share his recipe – and the rum seems like a fantastic idea.
